Great Vegan Meal ideas

Happy New Year!!

If you follow along with my weekly meal plans then you will know that our meals are usually vegetarian or vegan but we have decided to take on Veganuary and make all our food vegan.
A few years ago we changed our diet to completely plant based/vegan and also cut out all refined sugar. We did this for health reasons and we felt fantastic for it, we had so much more energy, we lost weight (Craig and I, not the girls) and our skin looked amazing! But over the years our diet and eating habits has slipped, so we decided to use the new year and veganuary to get out diet back on track.

Some of the meal ideas that I share, we have tried before but some of them are new to us and I add them to my meal plan to try as they look and sound delicious. I also add some that I find, that aren’t actually stated as vegan but can easily be adapted to be vegan. I also share the link to the recipe (if available) or the book that the recipe came from.

Lets take a look at this weeks meal plan –

MondayMexican sweet potato skins – This is a new one to us, although we have had some meals that are very similar. Black beans are a staple meal item in our house.

TuesdayMushroom and leek pie with mash and veg – We have had this pie before and it was delicious! When it got to winter, I really craved pie but didn’t think I would be able to get a really creamy pie filling that was vegan but I was wrong. This pie is delicious.

WednesdayVegan Mac n Cheese and salad – We have this mac n cheese quite regularly, as its Chloe’s favourite and she loves to have it cold the next day in her lunch too.

ThursdayOne tray potatoes and veg – This is a recipe that I saw on the Deliciouslyella instagram page and we tried it a few weeks ago and it was a big hit and so, so easy to make as its all cooked in one tray.

FridayMushroom quiche, vegan coleslaw and salad – This is completely new for us but liked the look of the quiche and the coleslaw, so I have ordered all the ingredients and am excited to try it out.

SaturdayBurger and chips – Nice and simple! We love the Beyond meat burgers that are available to buy at Tesco.

SundayLentil Roast, roast potatoes and veg – What can I say? I just love roast potatoes. This is another Deliciously Ella recipe from her Instagram page and looks amazing.
