I share our weekly meal plan in the hope that it gives you a few ideas of what to eat and even if you aren’t vegan but want to cut down on meat, then you can take a look at my weekly meal plan and pick one meal from it that you fancy trying.
We are now into the 3rd week of January and our Veganuary is going well. We have tried lots of different foods so far and have been building up a good list of ‘go to favourites’.
This weeks meal plan has a few of those favourites plus some new to us recipes. I treated myself to one of the Bosh books, so we are trying a recipe from that this week.
One of the new things we have tried and would highly recommend are the coconut collaborative little chocolate pots – chocolaty and creamy, these are great when you want a little something sweet, just try not to eat the whole pack!

Vegan Meal plan
Monday – Sweet Potato and Red lentil Curry – This is one of our favourite go to recipes that we all love.
Tuesday – Mushroom Wellington with roast potatoes and veg – This is a new recipe to us and I spotted it in the January issue of Vegan Food and living Magazine and it looked really simple and easy to make and then I will cook some roast potatoes because they are our favourite and serve with some veg too.
Wednesday – Squash Stuffed Herby Fennel Rice and Pesto – This is another one that I spotted in the January Vegan food and living magazine and it looked like a nice winter comfort food.
Thursday – Sticky Shiitake Mushrooms – This is a new recipe for us and it comes from my new Bosh recipe book. I love anything sweet and sticky.
Friday – Mexican Sweet Potato Skins – We had this for the first time a couple of weeks ago and really loved the flavours. Its quite similar to the veggie quesadillas that I make, in terms of the ingredients.
Saturday – Burger, Chips and Mac n Cheese – Saturday is my twins birthday and as we are unable to take them out for dinner, which is what we would usually do. I asked them what they would like me to cook for them instead and this is what they requested. We will be using our favourite beyond meat burgers and Chloe’s absolute favourite Vegan Mac n Cheese recipe from the happy pear cookbook.
Sunday – Sausage and bean stew, with mash and veg – We have had this once before and its another hearty winter meal.
