When I was a child, one of the things we always used to make was Coconut Ice. I also remember making it none evening at brownies too!
If you didn’t know, Coconut Ice is a British confectionary which is made using desiccated coconut, condensed milk and Icing sugar. The ingredients are mixed together with a small amount of food colouring and put in the fridge to set – no baking required.
Many years ago you used to be able to buy these in the shops but they seem to have disappeared and have become unfashionable but they really are very easy to make yourself and require very little ingredients.
If you are not a lover of coconut, then these are probably not for you but you could still give them a go and gift them. They make a very nice gift when put into a jar with some string or ribbon tied around the top.
Lets get to the recipe…
You are going to need;
250g Condensed milk
250g Icing sugar, sifted
200g Desiccated coconut
Pink food colouring
Method;
1) In a large bowl, mix together the condensed milk and icing sugar, using a wooden spoon.
2) Add in the coconut.
3) Split the mixture in two and add some pink food colouring to one part.
4) Dust a board with icing sugar and shape each half into a smooth rectangle and place them on top of each other. Roll with a rolling pin until the rectangle is 3cm thick.
5) Transfer to a plate and place in the fridge for at least 3 hours or overnight.
6) Cut into squares and store in an airtight container and keep for up to 1 month.
