Meal Plan

Happy new week! You may have noticed that there was no weekly meal plan last week and that was because I had a stall at the local village market selling my crochet makes and I had lots of bits to make to get ready for that, so I was just continuously crocheting!

So this is what we have planned this week –

Monday – Butternut squash Soup
1 butternut squash, peeled, de-seeded and chopped
1 litre veg stock
3 cloves of garlic finely chopped
1 onion, peeled and chopped
1 potato, peeled and chopped
Salt and pepper to taste
METHOD – Fry the onion and garlic for a couple of minutes, add the stock, squash, potato and salt and pepper to the pan.
Simmer for 20-30 mins, until the squash and potato and soft. Blend and serve.

Tuesday – Vegetable lasagne – I have shared this lots of times as this is our new family favourite meal to have.

Wednesday – Courgette Fritters with lemon herb dip, sweet potato wedges and salad – I found this recipe on pinterest and we haven’t tried it before but we have lots of courgettes growing at the allotment that need using.

Thursday – Pasta Bake – this is another one that I found on Pinterest but I am going to change it slightly and leave the sausages out.

Friday – Orzo salad – My quick and easy go to summer meal or sometimes we have it for lunch instead.

Saturday – Coconut Curry lentil dhal – Another one from pinterest (can you tell that I like pinterest?) We haven’t tied this one before either but the picture looked so good.

Sunday – Roast – We didn’t actually have a roast today, we had burgers and chips.
