Vegetarian meal plan – 09/11/2020
I Feel like our meals have got a little same-y, so I dug out some of my cook books that I haven’t used in a while to get some fresh inspiration, but we do have a few classics in there this week too.

Monday – Quorn escalopes, vegetable rice and broccoli – this one didn’t need a look in the cookbook, haha! but I wanted something for a lazy dinner.
Tuesday – Toad in the hole, mash and veg – we had some meat free sausages that needed using up so I thought this would be a little different for us. I have never ever made a toad in the hole, with or without meat! I am cheating a little bit with a packet mix for the batter.
Wednesday – Mushroom, leek and chestnut pie – We have had this a couple of times and its a real winter warmer kind of dinner.
Thursday – Vegan mac n cheese – This is Chloe’s favourite thing and it makes enough that she can take some to school the next day for her lunch. I will probably add something to go with this. I am trying to use up the stuff in my freezer, so that I can defrost it and I have some veggie burger things in there.
Friday – Creamy butternut squash and lentil tacos – This is a new recipe to us but it looked really delicious.
Saturday – Mushroom risotto – We have a very basic mushroom risotto often but this is a different recipe and is more like a traditional risotto.
Sunday – Burger and chips – Our favourite beyond meat burgers, these really are the best veggie burgers we have had.
