With all this beautiful sunny weather we have been having recently in the UK, it makes me fancy more salads for lunch.
Do you find that?
On my meal plan, I had planned on making soup but we just didn’t fancy that when its so warm, so I thought I would make us a quinoa salad today instead.

Quinoa Salad

This Quinoa salad was packed with healthy ingredients and was full of flavour. It was quick and easy to make and we even have some leftovers for tomorrows lunch too. I have added the simple recipe down below.

Quinoa Salad

Tasty lunch time recipe
Prep Time 10 minutes
Cook Time 20 minutes
Cooling time 10 minutes
Total Time 40 minutes
Course Salad
Servings 4 People (plus leftovers)

Ingredients
  

  • 300 g Quinoa
  • 2 Vegetable stock cubes
  • 1 Small red onion
  • 1 Courgette
  • 2 Bell Peppers
  • half A cucumber
  • 1 small tin of sweetcorn
  • 1 tin of chickpeas
  • Handful of olives
  • Salt and pepper to taste

Instructions
 

  • Follow the instructions on the pack to cook the quinoa, but add the stock cubes to the water.
  • While the quinoa is cooking, chop the onion, courgette, cucumber and pepper into small chunks
  • Cut the olives in half
  • Drain the sweetcorn and chickpeas
  • Once the quinoa is cooked allow to stand for 10 Mins
  • Once cooled mix all ingredients together and season with salt and pepper.
  • Enjoy!!!
