Hey, Its been a couple of weeks since I have posted a meal plan but I have been sharing a basic version on my insta stories but I’m back this week with a full meal plan, complete with links to recipes!
Monday – Gnocchi and roasted veg – I peel and chop carrots, butternut squash, turnips and sweet potato and put them in a roasting dish with some oil and a bit of salt and put into a pre-heated oven (200c) and cook for 30 mins. I cook the gnocchi in a pan for a couple of minutes and add to the veg once cooked and top with some grated veggie parmesan.
Tuesday – Sweet potato and red lentil curry, with bombay potatoes and naan bread – We have this so much as it is delicious!
Wednesday – Burger and chips – And it has to be Beyond meat burgers as they are the best!
Thursday – Pie, mash and veg – we love to have the pukka pies leek, potato and cheese ones.
Friday – Veggie lasagne served with lots of salad – another favourite in our house.
Saturday – Greek orzo pasta salad – We haven’t tried this yet but it looks pretty quick and easy to make.
Sunday – Speedy tomato pasta – it really is speedy and I love deliciously Ella recipes as they are healthy too and don’t use any refined sugar.
