Phew, that was a super hot week that we have just had in the UK!! Too hot to do much cooking but this week is a bit cooler, back to a temperature that I enjoy. As I sit here now and type this though it is chucking it down with rain!!
Anyway enough about the weather…
This weeks meal plan is –
Monday – Spaghetti bolognese – To make this I am going to use some frozen Quorn mince with some tinned tomatoes and add some onion, peppers, courgette and some herbs. I will serve it with some wholewheat spaghetti.
Tuesday – Butternut squash soup – So filling, so tasty and completely vegan. I am going to bake some bread to have with it too.
Wednesday – Veggie Quessadillas – These taste amazing!! I do change the recipe slightly to suit us but everybody in my house loves them. I might serve them with some potato wedges too.
Thursday – Mushroom stroganoff – The girls aren’t that keen on this but Craig and I love it. This is my own recipe that I will be sharing soon!!
Friday – Sticky Tofu and rice – A very quick and easy dinner to make, again this is my own recipe that I will also be sharing soon.
Saturday – Veggie pasty and salad – There seems to be a bit of a theme with this weeks dinners as this is also my own recipe that I’m sure I will be sharing soon too.
Sunday – Burgers and chips – You may have seen before that we are big fans of the Beyond meat burgers, they taste amazing and you have to try them.
