Ingredients
300
g
Quinoa
2
Vegetable stock cubes
1
Small red onion
1
Courgette
2
Bell Peppers
half
A cucumber
1
small tin of sweetcorn
1
tin of chickpeas
Handful of olives
Salt and pepper
to taste
Instructions
Follow the instructions on the pack to cook the quinoa, but add the stock cubes to the water.
While the quinoa is cooking, chop the onion, courgette, cucumber and pepper into small chunks
Cut the olives in half
Drain the sweetcorn and chickpeas
Once the quinoa is cooked allow to stand for 10 Mins
Once cooled mix all ingredients together and season with salt and pepper.
