Leek and Potato soup
A real winter warmer, using very little ingredients and perfect for all the family.

- 1 Kg Potatoes (I used Maris Piper) Peeled and cut into chunks
- 500 g Leeks Sliced
- 1 Small onion
- 1 tbsp Butter
- 500 ml Stock
- Pinch or 2 of nutmeg
- Salt and Pepper
Place the butter into a large saucepan, over a medium heat until melted.
Finely chop the onion and add to the pan. Sauté for a few minutes.
Add the leeks and cook for about 5 minutes.
Add the potatoes, salt, pepper and nutmeg (if using) and stir.
Place the lid on and simmer for 12-15 minutes or until the potatoes have softened.
