Leek and Potato soup

A real winter warmer, using very little ingredients and perfect for all the family.

  • Saucepan
  • Blender
  • Knife
  • Chopping board

Ingredients
  

  • 1 Kg Potatoes (I used Maris Piper) Peeled and cut into chunks
  • 500 g Leeks Sliced
  • 1 Small onion
  • 1 tbsp Butter
  • 500 ml Stock
  • Pinch or 2 of nutmeg
  • Salt and Pepper

Instructions
 

  • Place the butter into a large saucepan, over a medium heat until melted.
  • Finely chop the onion and add to the pan. Sauté for a few minutes.
  • Add the leeks and cook for about 5 minutes.
  • Add the potatoes, salt, pepper and nutmeg (if using) and stir.
  • Place the lid on and simmer for 12-15 minutes or until the potatoes have softened.
