Easy leek and potato soup recipe.
Its now what I call ‘soup weather’. The temperature has dropped, the evenings are darker and there is nothing more comforting than a hot bowl of soup.
The other day I made tomato soup for the first time, I can’t believe I’ve never made it before, it was so easy. I need to make it a few times before I write the recipe down though as this time I didn’t actually weigh anything out, I just used the amount of tomatoes that I picked from my tomato plant.
Right enough about tomato soup, this is supposed to be about Leek and potato soup!

I used maris piper potatoes but I guess you could use any type really, so a great way to use up some potatoes that you may have sitting around! Instead of blending all the soup so that it is smooth, I left about a third of the ingredients whole and just blended the rest, so there was still a few lumps in but if you wanted a smooth soup then just blend the whole lot.
This soup doesn’t require lots of different ingredients, which is what I like. Does anyone else skip past a recipe if it has a really long list of ingredients?
This is what you are going to need –
1. Potatoes
2. Leeks
3. Onion
4. Vegetable stock (I like to use this one)
5. Butter
6. Salt and pepper
7. Nutmeg (optional)
And that is it, most of which you probably already have somewhere in your cupboards. Serve with some bread and enjoy!
Leek and Potato soup
Equipment
- Saucepan
- Blender
- Knife
- Chopping board
Ingredients
- 1 Kg Potatoes (I used Maris Piper) Peeled and cut into chunks
- 500 g Leeks Sliced
- 1 Small onion
- 1 tbsp Butter
- 500 ml Stock
- Pinch or 2 of nutmeg
- Salt and Pepper
Instructions
- Place the butter into a large saucepan, over a medium heat until melted.
- Finely chop the onion and add to the pan. Sauté for a few minutes.
- Add the leeks and cook for about 5 minutes.
- Add the potatoes, salt, pepper and nutmeg (if using) and stir.
- Place the lid on and simmer for 12-15 minutes or until the potatoes have softened.
