When we used to eat meat I used to cook a dish called sticky chicken and rice and I loved the taste of the sauce.
So I adapted it to make it veggie/vegan by using tofu instead of chicken and changing the sauce slightly.
It is so quick to make and doesn’t use loads of ingredients so really simple too and of course its super tasty too!
I like to use The Tofoo Co. tofu and we really like the smoked one. It is extra firm and doesn’t need to be pressed before use, which is great because I always forget to allow time for that!
This is what you are going to need;
Toasted sesame oil
Tofu
Rice
Tomato ketchup
Sweet Chilli sauce
Soy sauce
Sesame Seeds
I like to sit the tofu in the sauce for 10 mins or so before I cook it.
Lets get going…
Sticky Sweet Chilli Tofu
Ingredients
- 2 Packs Extra Firm tofu cut into chunks
- 4 tbsp Tomato Ketchup
- 3 tbsp Sweet Chilli sauce Plus extra for serving
- 3 tbsp Soy sauce
- 2 tbsp toasted sesame oil Plus 1 tbsp for cooking
- 2 tbsp Sesame Seeds
- 240 g Rice
Instructions
- Place the tofu in a large bowl and add the ketchup, sesame oil, sweet chilli sauce and soy sauce and mix well. Leave to marinade for 10mins.
- Follow the instructions on the rice packet and start cooking the rice.
- Heat 1 tbsp of oil in a pan
- Add the tofu and all the sauce to the frying pan and cook on medium for 15- 20 mins or until cooked. Stir occasionally.
- Drain rice and serve onto a plate or bowl.
- Place tofu onto rice and add some more sweet chilli sauce and sprinkle over the sesame seeds.
